23 million years ago a volcano erupted and created the Tweed Caldera and the world-famous surf beaches from Byron Bay to Burleigh Heads. Today the peak of the Wollumbin (Mt Warning) catches the clouds as the sun sets and casts an array of colours over the caldera sky.

Nestled in the valley below lies the farm distillery where we make Ink Gin. Looking over the fields towards the sunset it was easy to be inspired to create this beautiful summer cocktail.

HOW TO LAYER COCKTAILS

Layering cocktails can be achieved by playing with varying levels of density of the cocktail elements. Add the heavier liquid first, then use a spoon to gently pour the lighter liquid on top.

We make our own Davison plum syrup, but you can also buy some from our friends at Caldera Fine Foods. Peach Puree can be found at most supermarkets, and orange bitters from your local bottle shop.

Shaved ice works best for this cocktail as it helps the layered elements stay separate until you’re ready to stir & slurp. Crushed ice will have a similar effect if shaved isn’t available.

Caldera Sunset : Gin Cocktail Recipe

  • 45ml Ink Gin

  • 30ml lemon juice

  • 30ml peach puree 

  • 20ml tart davidson plum syrup

  • Dash of orange bitters

Fill glass with ice. Add the puree, then the juice, followed by the syrup. Add each ingredient slowly, top up with more ice if needed. Gently pour the gin on top. Garnish with a flamed dehydrated citrus wheel and seasonal berries.
